Bought this while visiting the Maurithuis in the Hague. Looking for local food ideas. Many locals indicated nothing “interesting” to eat but after reading thru this I’d beg to differ.

 

  • Ham rolls with asparagus – ham, asparagus, mayonnaise, lettuce, tomatoes, boiled egg, parsley
  • Russian salad – cold ham, mashed potatoes, vinegar, mayonnaise, beets, apple, salt/pepper, pearl onions, gherkins, hard boiled egg, parsley
  • Puff pastry shells and mushroom ragout – puff pastry, beaten egg, mushrooms, flour, onion, butter, milk, chicken stock
  • Clear vegetable soup – carrot, leek, celery, sweet red pepper, parsley, beef/vegetable stock, bay leaf, thyme, mace, medium dry sherry, lemon juice, salt/pepper
  • Cauliflower soup – soup bones, water, salt, shallot, cauliflower, potato, cream, curry powder, parsley

  • Dutch stew – butter, cooked beef, onions, flour, vinegar, bay leaves, cloves, salt/pepper
  • Freshly cooked mussels – onion, celery, carrot, parsley, dry white wine, garlic, black pepper, mussels, mustard, white wine vinegar, salt/pepper, white bread, butter
  • Scrapple – pork shoulder, bacon, pork liver, buckwheat flour, salt, pepper, cinnamon, ginger, nutmeg

  • Watergruwel – barley, water, salt, lemon peel, currants, raisins, sugar, currant juice
  • Haagse bluf – egg whites, lemon juice, currant juice, powdered sugar, whipped cream, strawberries/red berries/raspberries
  • Vlaflip with raspberry sauce – raspberries, sugar, yoghurt, vanilla custard, whipped cream
  • Meat croquettes – butter, flour, stock, shredded beef, parsley, pepper, nutmeg, bread crumbs, beaten egg with water, oil for frying
  • Advocaat – eggs, sugar, vanilla, salt, brandy
  • Brandied raisins – raisins, sugar, cinnamon, brandy
